Quick and Easy Korean Rice Cake Soup

Korean rice cake soup is a traditional food eaten during the New Year. It is said that a person adds a year to his or her age after eating this soup. Rice cake is white as the snow that falls in the winter season, when New Year is celebrated in both the solar and lunar calendars.

Rice cake is called 떡 (tteok) in Korean and it comes in different shapes and sizes. The rice cake used in the soup is 카레떡 which is tubular in size and then sliced diagonally into thin ovals.

Most of the time, people add Korean dumpling to this soup. It is an option as the soup can be served without dumplings. This is best served with kimchi as a side dish.

This is my husband’s favorite Korean food ~ and I remember him ordering this when we went to a Korean restaurant in Manila. I often make this for him ~ at least once every two weeks. I sometimes boil soup from scratch but when I need to make something quick, I just buy the ingredients from the grocery ~ soup, rice cake and dumpling. Thus ~ quick and easy!

  1. Prepare the rice cake by soaking in water for about five minutes. Rinse.
  2. Pour the contents of the beef bone soup in a pot. Add water. Boil.
  3. Add the dumplings and the minced garlic.
  4. When the soup boils again, add the rice cake. Cook for five minutes.
  5. Add the beaten egg, sesame oil and green onion.
  6. Garnish with the crumpled toasted seaweed. Serve hot.
Recipe Notes

*If you wish, you could fry the beaten egg and cut in small diamond shape and use as garnish.
*Kimchi dumpling, rice cake and beef bone soup are all available in Korean supermarkets.
